Just getting around to posting pics - the first brisket on the Trek over Memorial Day weekend. Turned out great IMO - took about 15 hours total for a 4ish pound chunk. I should have trimmed it a bit more before dry aging for a couple days with Big Bad Beef Rub and some salt, but I was lazy. Still delicious!
Really the only challenge I am having is getting the controller temperature gauge dialed in on the app. Still experimenting with getting it just right, relying on the Thermoworks RFX as the source of truth. The Trek does a decent job of keeping the temperature within a reasonable range, just the number is off by quite a bit.
