Qualifiers: Conscious Carnivore. They break down whole animals . Real butchers not grocery store meat sales people. These folks have top quality meat,Not cheap but we know what cheap meat means.

My sister lives in Madison so I asked her about it. She knows of the shop and has been in but never bought. Said it takes a 2nd mortgage to buy a chicken. 🤣🙄

It is expensive but this is a real butcher shop. Almost unheard of anymore.

The UW madison has a butcher shop down near Babcock Hall. All varities of meat. You can order quarter, half broke down animals. You have to order. The UW raises some of these animals on their research farm. Others are provided by nearby farms.

The Meat Market offers fresh cut meat from local farmers & specializes in custom slaughter, roasting hogs, home cured bacon, hams & sausage.

I purchase from the Meat Market in Baraboo frequently. You can get Bone-In Beef Rib Short Ribs Whole Plates

for less than $5 a pound. Just ask one of the persons working the meat counter to retrieve one out of the cooler for you.

                Thanks for the tip!
I have a friend with a cottage up on the lake, spend a fair amount of time there, we do some pretty good cooks on holiday weekends. Most of it is from a RecTec pellet smoker or we have done turkeys on a spit over the fire pit using a wood fire, only comment about the turkey is "Damn!"
                Where you at in town?

Your turkey on the spit sounds great. Somtimes when I cook a turkey I soak it in Buttermilk over night. Very moist.

The other Meat marketaround Madison is Bucky's Varsity Meats. It is inthe Meat Science Building on campus. The address is 1933 Observatory Dr.parking isn't great. Order on line or call-in 608 262 7801. A bit high priced but top quality meats.

My SiL and her family recently moved just outside of Madison. I’ll pass on both of these!

I'm on the Sw side of Madison. Plenty of space for the smoke to rise in my Neighborhood.

Middleton or Cross Plains? Grew up in Madison. Really really miss Parthenon Gyros on State St. Haven't found a match yet anywhere in 30+ yrs...
