In Philadelphia's Reading Terminal Market, Martins' Meats is my go to butcher, homemade pork sausage, very attentive, they will do whatever you want and are super knowledgable.

the good butchers at martin's have all retired , their service is fair now, but their quality is poor. I use to take kielbasa from czwere's in port Richmond to the butchers at martins, for them to cook their own lunch. also the provolone broccoli raab sausage at Esposito's , or if you want something unique, d'angelo's both in the Italian market are far superior.
