    Ordered 2 Briskets from Mr. Brisket

    Finally got around to sending them an email for an order.


    I should have 1 Meyer Natural Angus Prime and 1 Imperial Wagyu Signature Level at my doorstep when I get home today.

    Process was very easy as Hank replied to me on Monday even though they were closed. I called in Tuesday to give them a credit card number and here comes the brisket.

    Curious to see the difference between the two and the quality in general.

    Not cheap as the Prime was $7.50 per pound and the Wagyu was $7.99, but should be two good quality briskets. Price is also relative as I haven't found any easy access to higher quality brisket in my area. The last one I did was around Christmas and was a SRF Wagyu Gold which was awesome, but almost twice the price of this.

    They also separated the point and the flat for me before shipping, which is great as I'm still a hack with a knife.

    Will post updates and pics as I get them and start working them.

    Thinking I'll only cook one this weekend, but who knows. :-)

                Thanks everyone. They both arrived yesterday and are in the fridge thawing. Will cook them both on my RecTec Mini. Fist pics will be once they thaw to show the quality in general as well as how they cut the point and flats apart.

                Hard to tell with them still frozen but both look like good cuts of meat.

                Hopefully they thaw enough that I can cook at least one this weekend.

                  Here are some pictures of the Meyer Natural Angus Prime. a few of the point and flat with some close ups to see the marbling. It's sitting in the fridge brining right now and I will cook it tomorrow.

                  Will cook the Imperial Wagyu next weekend.

                    Butterman -- Their site makes it look like they only do in-store pickup. It sounds like you had your briskets delivered though. Is that something special, or am I just missing it when I look at their shopping section? Thanks! -- David

                      @David-c you are correct. They just put the online storefront up I think in the last month or so. I signed up for their emails a few months ago and in there they indicated that you could just email or call for an order to be shipped so I emailed. Then called the next day to give them credit card info

                      Butterman -- Great. Thanks! I've been very happy with SRF, but in many cases their offerings are very expensive, so I'm interested in seeing what else is out there.

                    The Meyer Natural Angus Prime is on the RecTec Mini. Just enough room to fit both the point and flat on my smoker. Here are a few pics of them on the smoker. Will smoke at 225 using CookinPellets Hickory until the stall and then I will wrap it.

                    Using a slightly modified BBBR on these. Little less pepper and heat and a little more white sugar.

                        Pics of the finished brisket. I think I over cooked the flat as it was a bit stringy when I was slicing. Still good flavor but could have been better. The point tasted excellent.
