    Sourcing cut for burnt ends

    Looking to make burnt ends for Super Bowl party without cooking or buying a whole brisket, and realized sourcing just a point may not be so easy.

    So far I think the only separated point I've found online is Mister Brisket.. I also see beef belly at both Meat n Bone and Porter Road, have never tried using that for burnt ends but seems people do.

    Welcome any thoughts/advice:
    1) Anyone purchased from Mister Brisket recently with comments on quality or experience?
    2) Brisket point vs belly as a cut for burnt ends?
    3) Other sources (that don't involve getting flat along with the point)?

    A very well-marbled chuck roast could be made to work as well. Just google up "chuck roast burnt ends" and you'll get a bunch of hits, including some from well known folks like Malcom Reed's site and Hey Grill Hey. Malcom's got a video on his page:



    He cuts up the chuck before cooking, whereas the Hey Grill Hey approach cooks the chuck whole before cubing up. Cubing first gives more area for bark but also more opportunity to dry out the meat.

    Poor Man's Burnt Ends are a great way to get the classic BBQ flavors you love in burnt ends without having to smoke a whole brisket.

      I've done it each way, but only once each - discovered I don't much care for the classic burnt ends thing, much too sweet for me... Doing it Malcom style they did dry out significantly compared to the whole-roast style. But just one data point, again.

    A local retailer here in Albuquerque sells points only, at least they usually do. They aren’t the cheapest shop though, everything is done here locally - ranch is local, processing is local as is the shop. The meat quality is excellent, everything I’ve purchased from them has been great! Check them out as an option if you don’t go another way with this or can’t find a retailer. They just expanded shipping nationwide late last year, so should be able to get you what you need if you end up staying with just a point.
