I love Wild Fork but you never know how much you're going to get. The last time I ordered a brisket it was barely 10 lbs and I was having a graduation BBQ for my daughter, Thank goodness I had a lot of other stuff going so no problem.
This time I just felt like cooking so I ordered a brisket and got this 17 lb beast
I'm not complaining, I just want to reach 500 posts already and I'm just wondering if 1. This is typical of meat order places 2. Should share with the family or just create a secret brisket stash for myself with the leftovers? I

They stated the average is 35 but took out 50. They did this last time as well but refunded me the difference a couple of days later.
This time they said the average was 35, took out 50, but this thing should cost 60. I don't know if they will withdraw more money in a couple of days but I will update if they do. (I don't know if they can but wouldn't care if they did)
Soo they always take out 50 and offer a refund if it's light, I'm not sure what happens if it's heavy
They say clearly on the website, and they are true to it, that they bill by the actual weight at the cost per pound listed. I have bought from them countless times and billing has always been spot on.
Wild Fork always charges by weight, and charges an estimated value up front, which they then adjust after shipping to reflect the actuals. This is stated in their terms, it's not too hard to find. In my experience, they charge more up front than actuals, so that your adjustments are usually down instead of up. But they're quite clear that the prices quoted at point of sale are subject to change after shipping.
Variability is not uncommon when sourcing from non-factory-type meat producers. Unlike the feedlot style, animals are a larger range of sizes. To me that's a good thing
Fair policy, it is definitely a good thing! Or not, I thought to myself last night: "I wanna cook a brisket" tapped on my phone and went to bed. Forgot about it and then I got the text this morning "Your brisket has been delivered by roadie"

I've generally had a good experience with their products and their delivery method is great. However, a couple of missed caused me to cancel my subscription. There is a WF in the city so I'll jvisit their store when I need something special.
I love Wild Fork, and as others have said they’ll definitely adjust the bill to the actual weight. However, I think you have a legitimate complaint. Estimate 10 pounds and send me 12 - OK. Send me 70% more than they’re listing - not OK.
Today they have listings for 12# and 14# prime packers, so it seems that they’re trying to keep a fairly narrow range. I’m guessing a warehouse worker screwed up your order, and they might give you a credit if you call. I would if I was them.
I hope he has better luck than me. I’ve complained about items well outside the listed range and they basically said sorry no guarantees. I still use them all the time

I'm fortunate in that WF opened a brick-n-mortar not far from me. The store is very organized with clearly labeled wall and floor freezers by type of meat, then grades. So I can pick through the packages for what I think is the product and quality I want. The downside versus say Costco, is that everything is hard frozen, so sometimes it is hard to see the fat content or thickness of some items. Plus needing to bring a cooler with ice if stuff is going into the freezer versus the frig. Headed there today for some ribs and steaks.
Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
SRF: They always give a range. Order after order, my roasts and briskets were in the range, but at the bottom; then, all of a sudden, I got several in a row that were either at the top, or over. (This is where I order my Christmas rib roast, if I can’t find a good one locally. Skip the Wagyu, get the RR Ranch.)
Creekstone: Always at the top, or over. I had one 16-18lb rib primal come in at 22+.
Cheshire Pork: All I’ve ever gotten there are ribs, and they’re always right smack in the middle to slightly over estimate. If they say “6 racks, 30lbs average” (full spares) that order is going to be right around 29.5-30.5lbs, maybe 31.
Most other places I can think of (D’Artangnan, Allen Brothers, Meat Artisan, etc) are right in the middle of the range, with steaks always being a little bit over: a ribeye advertised at 12oz will come in at 12.5oz, for example.
Special shout out to Allen Brothers. I ordered two plates beef ribs, advertised 4-6lbs each, and got one plate of ribs that was under 4lbs and one that was over 6lbs! I called and they credited me for the order, and sent me another rack of ribs that were in spec. Good folks. (That was in the Before Times, idk what they would do now.)
It is kind of a gamble. You pay per lb and they give ranges of what the roast or cut could weigh but I’ve had them way under the range and way above the range.
Me to but around my way packers can be expensive and I have trouble finding good ones. I've found that WF is the way to when it comes briskets for me. At 3.48 a lb I'm gonna start buying them when I want burger meat
