        I’m such an outlier. I look at that and see too much fat. Prime beef or high end choice are what I want. I need some protein with my fat. I checked, I can buy a whole USDA prime ribeye loin for $15.98 a pound or a whole USDA choice ribeye loin $11.98 a pound. I’m not trying to say what anyone else should enjoy. This is what I like most.

          Johnny Booth I know I can usually look through a stack of choice steaks and get a couple of nicely marbled ones. That’s what I want to grill. I’m not settling. If I’m feeling like something a bit better I’ll look at the Certified Angus choice steaks.

          @oaksmoke - yes, I do like to browse to look for the best choice cut. I also look at the Prime at Sam’s that might be old. The butcher will re-price the meat in the case if the price is expired. It’s just wet aged a bit longer in the cryo wrap.

          Ditto. I may try some Waygu, but it looks like too much fat for me. I prefer a well prepared NY strip over ribeyes for that same reason.

          I’m done with Wagyu for a while. I enjoy it, very much in fact, but now that I’m retired I don’t want to pay the premium for it. And I think prime is getting closer and closer to Wagyu/American cross. And I love the mineral taste of prime.

              Speaking of Costco treasure hunts....our local had Prime Packer's yesterday....around $4.20lb if memory serves...my initial excitement turned to disappointment. The flats were stupidly thin....I'm talking maybe 1/2"....which is a shame because the points were huge.

                Yup first thing I look at on a packer is how thin the flat is

                They're cutting them now leaving a huge chunk of some muscle sitting off the top end of the point. It's not actually part of the point muscle, I don't know which one it is, but I've seen a trend of 24-26lb briskets that have probably 2-3 lbs of whatever this is 'extending' the point. I think it's intentional. I haven't bought and trimmed or cooked one yet to see what it is like, or even if it is similar to the point and worth leaving on.

                I learns my lesson on picking out a brisket. What I thought was a thicker flat turned out the the paper thin part was folded under.
                It cooked up fine after TRIMMING.

              Our local Costco's rarely have Prime briskets anymore let alone any type A5 Wagyu beef.

                DO NOT sleep on that Wagyu skirt steak they sell. That one is a good one. It is not A5. Totally different. But, killer. Tons of flavor and tender!

                (Even the normal, Arrachera version is awesome too. And that one comes marinated.)

                  Costco does have waygu burgers & grass fed organic burgers for far less. Some good eatin.

                    Sadly, the new Costco that is close to me does not sell organic ground beef.
