    Not A Happy Camper

    We went to Campfire farms to try Heritage Pork. I bought spare ribs.
    They came frozen in a package. I thought the frozen pack was half a rack. No, they were one rack and folded back in itself.

    All of us were very disappointed. Most if not all the meat was scrapped on the bones.
    The only meat on the ribs was the small amount between the bones.

    As shown in the pictures, bones were shiners on the meat side of the racks.

    The few bites of meat were quite tasty.

    I think I will stay with Smithfields commodity Pork Ribs.

      Ouch. Maybe their butcher needs the feedback and can improve in the future. Or maybe their back ribs are the way to go for more meat, sounds like at that size their back ribs would be true "baby backs" and cook up nicely. Were those the $27 for two racks ones?

        Wow that’s terrible! I don’t blame you for being disappointed. I’ve settled on members mark full spares from Sam’s Club. I can trim them to St Louis cut or run them whole and get very good ribs. These last several times I’ve bought them the chine bone is already removed. There might be some difference in fat content with heritage breeds but not enough for me to pay a premium. I’m old enough that I was raised on heritage breed pork. I like what we get now just fine. In fact I have two racks on the smoker now. I’ll add pictures in a bit. Here are the Sam’s Club ribs I smoked today. They were much better than they look. My food photos leave a bit to be desired. Those were as close to fall off the bone as you can get without it actually falling off the bone. I’d eat them every time just like this.

        Bad deal. I only buy my ribs from the butcher shop. Too many disappointments from the grocery stores and Costco.

          Bummer! I haven’t bought any high priced pork which is supposed to be better, so I may be speaking out of term here. But, my guess is that the difference in pork isn’t nearly as significant as select vs choice vs prime in beef.

            I do not believe that is a grading system for pork, no select, choice, or prime.

            bbqLuv I know that pork doesn’t have the same grading system as beef, but some pork is sold superior to run if the mill pork. My only point was that I didn’t think the gap between run of the mill pork and what is sold as superior in quality was as great as the gap would be in beef grades.

            I agree with you
            The two feral hogs I harvested did taste different, better in my opinion.
            The little meat from between the bones was tasty and quite good.
            Value-wise, I will take good old Smithfield's, or Safeway's extra meaty.
