Great butcher in Charlotte! All meats are locally acquired. Beef is grass fed Black Angus aged 21 days. I love their very meaty ribs. They have "packages" to suit your needs, or will custom prepare one for you. Bison is also regularly in their meat case. Grass fed sometimes means lean. Does the beef have much in way of marbling?
