I know it's a bit of a stretch, but anyone know of some good butchers in Belgium? I already read what came up on the search function.
I'm down south, not far off the French border, so something in France is fine too. I don't mind a bit of a drive, if I can get the meat I need.
I found one place that had some decent looking beef ribs, but he's not a cut to order butcher so you can only get what he has (individual ribs)... pretty sure he's just a store front and not a "real" butcher. Found another that actually has pork ribs, but... just didn't turn out well. Not sure if it's the breed they use or if they just slaughter young, but those ribs were tiny (as in, even the bones were really small). I'd say, at best, they were maybe 70% the size of your standard US baby backs... and trimmed to the bone. Might be able to work with him to get them trimmed more to my liking (once I learn a little more French). I haven't found anyone with brisket yet, and the one place with butt only had boneless and cut small (the biggest looked to be maybe 4 pounds).
So, if anyone has suggestions I'd appreciate it. I'm going searching for a top-opening meat fridge/freezer soon, so worst case (if I can't find something close) I can do a long drive and freeze extra meat.
