What meatpackers are doing because beef is so expensive

Here's a gift article from the Wall Street Journal. Lot's of details and illustratiions about dealing with the beef shortages and costs:

Years ago I worked with a guy who spent over 30 years with the chicken industry. They would have yield goals with bonuses attached that were practically unattainable. This guy he worked with got people to work over (extra $$ from him) and scrape bones just to see if somehow he could get the bonus. He did get the bonus, and the VP who gave him the check in the conference room didn't hand it to him, he threw at him in disgust. Wonder whose bonus that money came out of.

I’m really blessed to live where cattle are still plentiful. The fires last year in the Texas panhandle killed so many cattle that it will take them years to recover. It’s common here to buy a steer from a local rancher, fatten it out at your place, then have it processed locally. A lot of the beef in my freezer is within 60 miles of where it was born.

I wish I could do that but no land and no nearby processor. Luckily I have a friend in the cattle business so I can buy from him.

My local guys are telling me they’re cutting back on raising beef. Less whole beef available for people who purchase and split full orders of beef.
