Growing up in the 50's and 60's, we always had a beef butchered once a year, for family use. Mom had a locker in town, a chest freezer, and the refrigerator.
On my own, with a family (3 kids), I have never bought even a part of a critter. When I was working, cooked hardly at all, and wanted flexibility. Still want that flex, altho only 2 of us.
Venison, however; much smaller. Can accommodate a deer anytime. But only if processed by Everett at Merna Pack. Hand boned, no band saw, no marrow contamination or gaminess. Mule deer, whitetail, male or female, prairie grass, river bottom, corn or silage; does not matter. Not gamey. He starts to get mad if you try to skin it. Just gut it.
Are in town freezer lockers even available now?
In college the six of us would get half a cow and half a pig at the beginning of each year. We were lucky to rent a locker in the butcher shop walk in freezer. Worked out very economically and we ate well.
A second pic of the meat in a standard freezer probably would have helped sell the idea. That said, that is a lot of meat and far more than I expected from half a cow.
Mid - 70's, my dad went to a 4H show at the Cow Palace in San Francisco, and came away with a 1/2 a steer (split with a partner). The next year, he was all in on a whole. We rented a cold storage locker in the next town, and got an upright freezer for the garage.
Periodic trips to the cold storage to replenish the garage freezer. With 7 kids, that meat never lasted until the next year, but we ate good!
