    Paulina Market---3501 N Lincoln Ave, Chicago, IL 60657

    I've been going to Paulina Market for over 30 years, and while I don't get to go as often as I used to now that I'm out of the city, but they have maintained the same quality and service I have always received there. Great quality meat. A little on the pricey side, but you get what you pay for. They are very knowledgeable and accommodating to special requests.

    My go-to butcher for the 10+ years I lived downtown. Always received quality cuts with great service.

    Fantastic butcher. Simply fantastic. Everyone behind the counter knows what you need them to know and more. Love Paulina. (also, worth stopping by Frasca for a pizza and a beer while in the neighborhood).

      Update: attempting to get a strip loin with full fat cap and bones. I believe known as a NAMP 175 2x2 or 1x1. Want it for dry aging, as it would be the strip equivalent of a NAMP 107 which is an untrimmed prime rib, something much easier to find or substitute (like with a 109A). Any rate Paulina's getting it for me, pickup tomorrow. Cutting it from one of the cows they get on Tuesday.

      Boo yah.
