We actually thought about it and talked with them about it. After learning about what it takes to run a small grocery store without the buying power of Kroger or Albertsons. My wife and I just couldn’t do it even if we had the starting capital.

Awwww Jeez. I have had two other old guard butchers shot out from under me. Both of them were kind enough to take time and show me how they fabricated meat cuts and just chat. It is not all bad news. There is a new younger generation coming up, but they see themselves as artisans and charge appropriately. Sigh.

I hear you, that artisan stuff is fine and dandy but sometimes a pork chop is still just a pork chop.
