I got my neighbor hooked on Tri-Tip and he asked the butcher at Publix if they had any, yes! Good to know, they don’t put it out but can have it in the back. Butcher asked if he wanted a 5+ pounder, NO! 2-3# was received!

For the last year of so Publix here frequently has tri-tip on display, but for many years we've gotten them from Publix just by asking. Publix prepares beef for display from primals in the store, so they can get you a lot of cuts that are not displayed. This was also true of top sirloin cap that has now become popular under its Brazilian steak house name of picanha.

Should have bought that 5 pounder. Probably came from a steer. Better marbling. the 2 and 3 pounders probably from heifers.

Hulagn1971 I had an old friend (RIP) that was an old time butcher. He would take me to Costco and go over the different cuts of meat. He told me that between 2-3.5 lb Tri-tips generally came from heifers and the size you normally find. He told if I ever came upon a 4-5 lb. TT that it was probably from a Steer and to buy it. Stating that Steers are more internally marbled than heifers. Heifers carry their fat more on the outside. FWIW.
