    Question about some cuts at Costco?

    So I've seen these lately and made me wonder...

    If you look at the tri tip, it looks like a whole tri tip on top.

    Are these just large bundled packages of multiple of these cuts? Like, it's got 6 tri tips in there, or 3 or 4 whole skirt steaks? I figure it's gotta be, right? Costco for some reason labels their skirt as 'flap meat' and I have no idea if it's inside or outside... I'm guessing outside, as that is the lesser quality one right?

    Sorry if you can't read the pics - it's 17lbs of beef flap meat and 15 pounds of beef whole peeled tri tip.

    Flap is similar to skirt but a different cut. It’s usually a little more tender than skirt. I’ve cooked some flap steak before and really liked it! Outside skirt is better than inside skirt. It’s been my experience that unless they label it as Outside Skirt, you’re going to be getting Inside Skirt. There’s not too many retailers that sell outside skirt.

    I haven’t seen those packages at my local Costco - everything I’ve purchased has been two packs of tri and then 2 or so pieces of flap. The flap is excellent though, I use it for a lot of things, tacos of course, wok/flat top cooking and then just regular grilled steak & frites. Really tender and flavorful.

    If I saw these, I’d probably buy them this way as well though and just separate as I do with the smaller packs. But I’ll keep an eye out next time I’m there.

      Flap meat is fantastic. I used to grind it and it makes an excellent burger as well as tacos. Yes there are multiple tri-tips in there.

      outside skirt is fantastic. Inside skirt is a lot more tough.

        I agree, the last time I cooked outside skirt I didn’t even have to marinade it, it was plenty tender on its own.

      At my last Costco run, they had packs like in your pic that were labeled “outside skirt”. Each pack had 2 long skirts. I didn’t keep their packaging as I separated and vac packed them separately before freezing. The same for tri-tips, usually trimmed and 2 to a pack, so it is hard to see the condition of each separate one. However, I’ve always found their tri-tips to be excellent, whether prime or choice.

        His picture above shows the tri tip at a total weight of just over 16 lbs.
        You are saying there are usually 2 per package?
        The few tri tips that I've done were only 2-3 lbs each.
        Are we talking about 2 different cuts of meat?

        Probably 2 different cuts unless his Costco decided to bundle more tri-tips together. Yes, the tri-tips I see at Costco are usually 2.5-3 lbs, although the one I got on that last run was a pre-seasoned, 1 in the pack, on-sale choice that weighed 3.75 lbs.

      I've never seen either of those at my Costco.
      The flap meat that I buy at Costco comes in shrink wrapped Styrofoam tray like you see in the grocery store.
      It comes cut in strips (roughly 1/2 lb per strip) in packages that are usually 3.5 to 4 lbs each.
      This is obviously an old pic. I wish it was still $7.99/lb ...

      Other than ground beef, this is my most used cut of beef. It can be used in a variety of ways.
      It's very tender even when cooked well done....don't ask me how I know 🤦‍♀️

      I've never seen Tri Tip at my Costco. I probably would get it if I did, although for that $100 total price, There better be a handful of smaller ones in there, because I'd need to get that many meals out of it to make it cost justified.

        Yeah, these are just big cryo-packs with multiple pieces of meat. They usually aren't as trimmed up as the individually packed ones but are a bit cheaper per pound. And if they don't have these out for a specific cut you want they can get you one from the back. I usually buy my tri tips and flank steaks this way.

        The loin flap meat might also be bavette which is a favorite of mine. I have never seen that particular cut in our Costco but would buy it in a heartbeat if I saw it.

            Those packs will have between 4 to 5 five tri-tips.
