Happy New Year Everyone! MattH from Long Island, New York. Had an old Char Griller or Char Broil smoker for years but never really got the results I was looking for. I love to cook and last May my wife bought me a Traeger Pro 780 WiFi Pellet Smoker - wow, what a difference. Not as much smoke as a conventional smoker, but that's ok for me and most of my guests too so far! I did add a smoke tube for last couple of smokes and that seems to add the right amount of smoke. I made my first pastrami a couple of months ago, something I've wanted to do for a long time and damn was it good! One of the first things I made was a pork shoulder that didn't finish until about 6 or 7 hours after we were supposed to eat - Ha! live and learn, made for a really good lunch the next day!
