    Hey Gang....happy to be a new member of Pitmaster Club. I just read Meathead's book, cover to cover, like a novel. It was fantastic and spoke to my inner cooking geek. I just love the science behind why things work the way they do, especially in the kitchen or, like now, at my grill. I started to really learn about cooking by going deep into Cook;s Illustrated (kudos to Chris Kimball) and continued with more food science books. I just ordered your recommended ThermoWorks "Smoke" thermometer and can't wait to figure out how to calibrate my Weber Spirit gas grill to do a low and slow cook. By next weekend, I should be up and running. The hardest part is what to make on the maiden voyage! Thanks to Meathead and the rest of the crew who put that beautiful book together and give me the confidence to take on making BBQ.

                              Since you’re new here, please check out our homework assignment post for new members, it contains a few how-tos and please-dos. This will help you learn your way around so you can get the best experience from our forum.

                              Also, it's very important that you:
