    Good Day from Palm Coast, Florida

    My name is Gene Smith and I have been a Floridian for 40 years. I love outdoor cooking whether I am smoking or grilling. I have an older model Brinkmann off-set smoker (heavy gauge medal) that must be thirty years old, a Weber Kettle Grill for beer can chicken and a Weber gas grill for small meal cooking such as beef and pork steaks, roasted corn on the cob, etc. I have been outdoor cooking for about 60 years. Frequently do pulled pork, ribs, briskets and beer can chickens. I have a good pork butt dry rub recipe and a good wet rub for my beer can chickens. I use a commercial brisket rub I bought while visiting Pennsylvania. I enjoyed a military career in the Army and retired to Florida. I did a 20-year second career in law enforcement here in Florida. I enjoy cooking both in the house and outdoors and volunteer to cook at my local American Legion Post. Pleased to be a member of the Pitmaster Club and reading stories about the delicious fire pit culinary creations.
