Hello all. Happy Father's Day! My wife and kids gave me an 18" Weber Smokey Mt as an early present. I occasionally tried to smoke some ribs or pork shoulder on my Weber gas grill, but nothing fancy. Well, I jumped right in for a Father's Day BBQ yesterday. It came out pretty good for my first time. I did 2 pork butts, 3 racks of ribs, a smoked corn casserole, and a smoked bbq meatloaf. Thank you for all of the excellent advice here. Best tip I hadn't heRd before was putting the butts in a cooler. I didn't have to worry about cooking to a time, and they came out three hours later still too hot to hold. I didn't take a picture of the food as it came of the smoker, but I included a picture of the spread. Thanks, and looking forward to the info here as I experiment all summer.
