Hey all. I have been a member for several years. I quite enjoy everyone's posts. I do most of my smoking on a 22' Weber bullet. I have got it down where I can cook 225-235 degrees. I do use thermometers. I am real comfortable in my Memphis style ribs (baby back or trimmed spare ribs). My next step is pork butt and after that is brisket.
Just thought I would join the community. I know that this place will help you out if you ask. I do know, any day you can fire up a smoker or grill, that matter, is a good day. I live about 20 minutes from IMS ( Indy 500). Besides my smoker, I have a Weber Performer and a 1995 Weber kettle. I am a charcoal guy that uses real wood to cook.
