Should have also added that I have been following the site for a couple years. After watching the meathead WGN reverse sear video I dry brined and reverse seared a tomahawk ribeye on my Weber Performer and now I am hooked. Steak was unbelievable. Take away is I need a thermopen. My "instant read" is not so "instant". Good enough for brewing but not for grilling.
