I came across this site while looking for reviews to purchase a new gas grill...What a Find! I have learned so much about technique and even tried a couple recipes on my new grill. I just purchased the Weber Genesis 330 along with the smoker box kit (7575).
I am a weekend griller looking for better techniques and recipes to grill awesome meals for family and friends; Meathead's articles on calibrating and grill setup are killer. In the past, I used to grill by time not really knowing how the food I prepared would turn out. I am now learning that it is the temperature to focus on and not the time. Thanks to meathead's info, I even purchased the Maverick duel thermometer and Thermaworks lollipop thermometer for precise cooking. I have to admit I was very skeptical about cooking a thick steak at 225 - 250 degrees; I couldn't comprehend how such a low heat could cook such a large steak...but it worked using reverse sear.
I look forward to the many awesome forums and for any tips on using the Weber grill with the smoker kit.
