While offsets can produce some great product, they're a lot more demandin than a pellet cooker...might I suggest somethin kinda in between (an infinitely more affordable) such as a Weber kettle, Weber Smokey Mountain, or a Pit Barrel Cooker?
It's a way to dabble in more hands on fire management, see how that suits ya, before droppin several grand on a nice offset....
