    I have a prime packer that's been in the fridge since early March,trimmed and rubbed for an event on Sunday.No untoward odors or colors, any thoughts?

    Wire it up, fire it up and let her rip. 275* until probe tender.

      i'm more in the 225/250 camp! I'll take pics and try to get them posted.There will be 4 shoulders and 6 yardbirds to join them in the pit.

    I have a brisket in the freezer I want to cook on the 29th. Should I be moving it to the beer fridge now?
