    Figured I would Introduce Myself

    Hello all. I have been a member for almost a year now, but I have never posted anything so I figured I would at least introduce myself since I want to start getting a bit more active with the club. I was stationed in FT Hood Texas when I was in the army and that was when I got my first real taste of BBQ. I say that because I was born and raised in central Maine, and BBQ there was hotdogs, hamburgers, or chicken on the gas grill. I started my own personal journey to get that taste back with BBQ in 2013 in Vermont with just an $88 Kingsford charcoal grill from Walmart. After many rib cooks on that I wanted to branch out to be able to do good pork shoulders and added an 18 inch WSM to my arsenal. That is when the bug hit. About a year and a half after I bought the Kingsford I was going into the BJ's in Lebanon NH for some ribs and a pork shoulder I laid my eyes on the Brinkmann Trail Master Ceramic Egg. At just under $300 on a sale at the time I couldn't pass it up and bought it that same day and haven't looked back. I have cooked chickens, turkeys, pork, beef, and even did a deer leg on it once to test out how that would work. Temperature and weather have not stopped me from cooking year round, however I believe a tornado probably would. In 2015 I moved to Henderson Colorado packing up my kamado and bringing it with me. As of this year I have started doing packer briskets from Costco and have gotten good results so far except for the very last one that I did. It tasted fine just a smidge drier than I wanted. I found this site many years ago when I was looking for a remote meat probe and have always kept it as a favorite up until last year when I decided to join the club. The multitude amounts of different tips and advice on here is awesome and has helped me out a lot over the years. And the reviews are awesome, LOL wish I could do some of those, as it has helped me get different equipment over the years and I will need to replace my old Brinkmann soon due to the heat deflector cracked in half and no replacement available due to the odd size.

        Welcome to the Pit! I cook on a Kamado. You might try the Ceramic Grill Store. They might be able to make you a custom stainless steel wire wrack to hold a round stone. I think I would look for a workaround replacement diffuser stone before I gave up on your bargain cooker.

          LA Pork Butt it arrived today. I did a test fit just to make sure before I unwrapped the stone. And baddabing fits wicked good. Washing it tomorrow to get any excess oil off and then I will snag some pictures.

                              I agree. I almost went and bought another one when I arrived in CO just because I knew how to run it and seal it off for better cooks.
