We are on the downside of winter. Just cleared 3 feet of snow off my deck to get to my Komado Joe. Gotta smoke some ribs this weekend. I found this site while looking for a recipe to make my own corned beef. I enjoyed reading about the process and the science. The corned beef was excellent. I told my wife that joining this site was a just a small contribution and a way to say thanks for making my St. Patty's Day dinner (celebrated it a week early when the kids came home from college) a huge success.
