Hi Guys & Gal’s

The site seems very informative & being a novice to all things bbq, just what I need 👍 Cooking on a 22” Weber Kettle for a few weeks with pretty good results so far ( still needs A LOT! of work but I’m kind of happy with 1/2 of my cooks )
Ive pretty much dived in & got a slow & sear & vortex cone ( both just arrived in the mail today 😁 )
& after scouting around amazingribs.com I saw today that there’s a Santa Maria bit of kit available for kettles & ordered one straight away 😆
......Man!! So many techniques & cooking methods to learn, I’m going to be busy

I’m actually from Aotearoa ( New Zealand ) & our pits for cooking are holes in the earth ( Hangi )heat up rocks to high temperatures, throw our food on them cover with vegetation, sacks & then earth & cook for a few hours

Standard for big gatherings of 20 to 100’s of people, it’s one way Maori ( indigenous to NZ ) have always cooked food.
Very Similar to Hawaii, I think they call it an Umu
