Thank you all for the warm welcome!
On the cats, we're got a little bit of a rescue thing going on. We had a pretty strong number of feral cats in the backyard. We managed to live trap the females and get them fixed. Also, as when some of males would get injured, we'd take them inside. The thing is....once the cat comes inside, it never wants to go back outside. We're at sixteen at this point.
Here are two photos of my legacy cast aluminum grill. Decades of Thanksgiving turkeys have been cooked on this thing.
And, to my surprise, I got a Weber iGrill 2 meat thermometer for Christmas. (How timely!) It's a cool little gadget. Both probes match up in their readings and the low/high/target temp alarms are loud (and a little startling). It is a bluetooth device and there are, of course, range issues with these things. From my home office I have line-of-sight (through a window) to where I grill so I am hoping that will be enough. It comes with two probes, but no grate clip. I am thinking I'll just stick the second probe through a ball of foil and try to anchor it to the grill that way for now.
The Slow n' Sear is on my horizon. One thing I like about it is that with all of the reviews and videos is that it seems to give repeatable results (more-or-less); that is, if you light this many briquettes and arrange them in this way, you will get around x temp and it will typically burn for x time.

Welcome to the Pit! And congrats on your soon to be new Weber. After years of trying different cookers, I finally came back to the trusty ole Weber kettle. It’s a fantastic grill and smoker

And as an odd post-script....I discovered I had another grill; well, at least a grill I had forgotten about. My wife reminded me that I had an old gas tailgating/tabletop grill in the attic. I thought I had tossed this when we last moved, over a decade ago.
My memory is that I only used it a few times and was disappointed that steaks -- or anything, really -- never cooked well on it. (With just the knowledge from this site gleaned in the past few days, I clearly had no idea what I was doing!)
It's a CharmGlow single-burner grill. (Apparently was once a private-label brand for Home Depot, possibly a re-branded Nexgrill.) It is in need of significant clean-up, but seems salvageable. What an interesting surprise. Something for weeknights/hotdogs/quick salmon, if I can rescue it. (Wow it is dusty!)
