Joined today! After debating with myself forever, I decided to finally join. I've been following "meathead" for a few years after being told bout"Amazing Ribs" from a fellow charcoal user - I have never gone to the dark side of gas grilling. Prior to looking at the site, I had never smoked meat, i had only grilled, although I have always grilled 12 months a year, up here in Western NY. (For anyone who is geographically challenged, Rochester, NY, is about three hours from Cleveland, and seven hours from NYC.) Last Xmas I got Meathead's book, and have committed parts of it to memory. I'm pretty new to the smoking game, but have loved BBQ for years, and since I will be entering my ninth decade of life next year (i.e., 80), I figured I should learn from the best, 'cause I probably don't have 20 years or so to experiment!
What I now use is a 22' Weber with a Slow 'n Sear (I got rid of my Smokenator), and don't have much room for anything else. I get pretty good results on pork ribs, but haven't really tried anything else, due to time requirements to cook, laziness, etc. However, I do want to try to smoke some "dino' beef ribs next summer.
