I think barbecue is one of the most fantastic cooking techniques/foods on the planet. Barbecue changes everything for the better. I have used this site for info for years, figured it is time to put something into it, and join.
I am a KCBS judge, 26 events so far. Should become a master judge next year. I started doing that to learn how to do good barbecue, and have learned a lot from the judges and cooks there. Some of it is not practical, like how to make up a box, etc. I hope to be learn the more practical stuff here.
I have had a Big Green Egg for 20 years, just bought a PBC. Still learning that, it is different. Fantastic results so far.
Both have pros and cons, and I can see the need for another type of smoker in the future.
