    Hello from Sparta, WI. Forgot to add the state. I am looking to improve my skill in smoking. I have done a couple of butts and some ribs with good results. Also smoked a salmon filet using meatheads rub recipe. Started with a trial membership and decided to join. Am using a Pit Boss 820 pellet smoker.

                        Welcome from South Texas to the greatest resource I have seen for people who char meat into fine cuisine. We cook without fire down here in Texas since the temperature for smoking is considered 225 degrees and it is close to that by 1:00 pm. We just let the sun hit our pits in the afternoon!

                        All kidding aside, since it will be 88 degrees today, hope you enjoy your football weather up there, here we just enjoy football!
