    New member from Thailand

    I am a amateur cook and love cooking. All my worry, stress are gone while I am cooking. Would like to own a sausage and cured meat shop when I retire in 5 years. I am in to sou vide cooking for 2 years and found out that the next step will be cured meat, smoke and bbq. I have been reading this web site for a while and decided to become a member. Love you all and wish me luck.

                    Since you’re new, and if you haven't already done so, please check out our homework assignment post for new members, it contains a few how-tos and please-dos. This will help you learn your way around so you can get the best experience from our forum.

                              Sawatdee khap, Bancha. That's about the extent of the Thai I recall from a trip there a decade and a half ago. Here in the US, Gai Yang is having a moment, and a bunch of pit folks have turned in a few different versions. Wondering if you have a go to version.
