Hi, my name is Ken and while I've grilled for some time, this is my first time to really try smoking some good food. I have an IT background, and became disabled this past February, so I decided to spend some time learning how to cook great food. I recently wrote several software reviews and earned Amazon points, so I just bought (for free!) a Smoke Hollow 3615GW propane smoker. Not as nice as what I've seen on here already, but free is free, so I'm sure I'll be able to make it work!

While I live in Colorado Springs, I'm from Texas, thus my handle SimpleTexan. Can't get any simpler than me! I hope to learn a lot from the folks here and try out some of the recipes. First though, I've got to put this thing together!

Large Big Green Egg with a Ceramic Grill Store rack system, and the SnS setup.
Weber Genesis SA-E-330 LP INDIGO with SS Grates, Weber Crafted frame kit, baking stone, griddle (2/3), all from Ace Hardware.
For the first time in a long time I have no kettles as I gave them all away.
