One piece of advice from everything that has been asked & offered, patience. Cook with what you have & what you will learn for a couple of days/weeks while you are doing research & investigating. Take a little time & weigh whats been presented. Patience & you will succeed. Keep the fires lit & smoke on.

Probably going to get a lot of different answers, but for ease of use (if it fits your budget), love my Rec Tec Bull (RT-700) pellet smoker. It's super easy. Set and control the temperature and monitor your meat from an iPhone app (or on the smoker if preferred). During my last smoke for pork butt, 14 hours and I only touched the smoker once to wrap the meat for the stall. Temp never varied in the smoker more than 3 degrees from where it was set. Could not be easier.
