Howdy Folks, from Summerville SC!

I am in my late 50s and I have always grilled, done some smoking, and outside cooking. But, I believe, I have been mostly a "knuckle-dragger" (from a pretty good book I have been reading!) as far as really knowing what I was doing. I recently bought a Kamado Joe Classic II, and since I paid more than I ever thought I would pay for something like this, I decided to try to actually understand what it was I was supposed to be doing! I looked for the best book I could find on the subject, and Meathead's "The Science of Great Barbecue and Grilling" kept coming up. I bought it and started reading, and of course it pointed me here. Besides trying to learn how to actually cook some decent food, I love camping. I have done all kinds of camping from backpacking to "Glamping". I now have a 30 foot TT on a river in the beautiful mountains of North Carolina, and try to get there as often as I possibly can. I have been going to the same campground since I was about 15, and absolutely love it there. I look forward to conversing with you folks!

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
