When I was 10 I helped my father BBQ. His favorite was, a marinated in oil and vinegar, Flank steak. Always a hot BBQ and cooking utensils required tongs, oil,Spray bottle with water and Matches. You are thinking why matches if the BBQ was ablaze?
Well he threw on the steak and while direct cooking would sear the steak it also ignited the oil in the marinade. Then he would reach for the spray bottle and put out the flames. of course this reeeeeaaly slowed the cooking down and here came the oil and after a moment the match and voila, ignition. To be repeated again usually. Fascinating to watch. Thanks to my Dad 55 years later I am still fascinated with BBQ's. Albeit things are done differently now.Thank you AmazingRibs for all your help.
