I've been wanting to buy a smoker forever. I though I'd start small and bought a PBJ. In my very first cook (brisket) I hit "The stall" but I had no clue what was happening. While searching the Google machine I found Meathead's article here about the PBC Tips and Tricks which linked me to all kinds of other articles including his article about the stall. I was blown away. Next brisket is getting the Texas Crutch with a faux cambro treatment, I can't wait. Thanks Meathead!

Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
