I have been smoking meats for about 12 years. I was on a competition BBQ team when I lived in South Dakota and enjoyed EVERY minute of it. Had some great teammates and met some wonderful people. I still smoke quite a bit with my two UDS. I have been expanding into different items to smoke. I have smoked ribs, brisket, chicken, turkey, pork belly, made bacon, almonds, and a lot of cheese. I enjoy making my own rubs and also making different sauces. I have a great job but maybe someday I will do some catering or start a food truck.
