I signed up for this forum a week or so ago and have been exploring quite a few of the posts in the different areas. I am thoroughly enjoying learning from all of you here. Since spring 2015 I've been cooking on a Weber Performer Deluxe and have done the traditional steaks, burgers, brats, and chicken breasts, and also a few turkeys, hams, and recently even a brisket.
I just added a Slow-n-Sear, a Drip-n-Griddle, and the BBQ Extreme version of the Fireboard thermometer set. Wow! Those accessories make things a lot easier.
i have always enjoyed grilling, but a 4 day weekend in the fall of 2014 at a lake house in upcountry South Carolina with my Mother and my 6 siblings and all our spouses changed everything for me. All our meals were centered around something cooked on a ceramic cooker (Kamado Joe) and hardwood lump charcoal. It was incredible. I had no idea what amazing food can be cooked with smoke. I was hooked and have been learning ever since from all the experienced cooks out there who are so happy to share their tips and tricks.
I am looking forward to learning a lot more from all of your experience. Also looking to step up my equipment in the future, but I love my Performer and want to continue to learn more before I go to equipment for larger groups and easier advanced cooking. I've looked at a lot of great options. Currently I'm very intrigued with Peoria Cooker's MMIF, the Meat Master Internal Firebox.
I'm looking forward to this journey with all of you. What great fun, not to mention the the great food that goes with it.
