    New to Pitmaster Club

    Greetings from Austin, Texas from an experienced outdoor cook, new to Pitmaster's.

    I have learned a by reading Meathead's book, cruising Amazingribs.com and spending a lot of time cooking outdoors.

    I have a Pitts and Spitts stick burner, Weber Summit and a relatively new Rec Tec 680 pellet grill. I am 75 and retired so have plenty of time to enjoy my hobby. I am pretty good at it, but am always learning and I enjoy helping my friends and neighbors learn to cook outdoors.

    Being born and raised in Texas, I had to try slow smoking brisket many years ago. I started with a home made non offset oilfield pipe smoker / grill. I really never "got it" until moving up to an off-set smoker. My confidence and my briskets really started to improve.

    At this time, I am comfortable and will try just about any recipe. I have a large recipe book collection (heavy on grilling and smoking) and several 3 ring binders with recipes from Amazing Ribs, Traeger Grills, Rec Tec pellet grills, and any recipe I run across that I think I might try some day. When I try a new one, I always make notes as to how it came out and suggestions for improvement. I hope to hand them down to my son and daughter someday, who both love outdoor cooking, too.

    Hopefully, I can continue to learn and maybe even contribute something worthwhile for others on Pitmaster'. I look forward to the adventure.

                            Welcome to the pit from another newbie. I grew up in San Antonio, now living the Island life here in Nebraska. (Figure that one out.) Being in Franklin BBQ territory, I'll bet you do smoke some good brisket! I look forward to lots of learning!

                              Hello back, Luke. I have not yet invested 3 to 4 hours standing in line to try Franklin's BBQ. There are several spin off's who have learned from Franklin and I have tried them and they are excellent. All use only cracked pepper and Kosher salt. He was shut down for about 3 months after a fire in his pit room spread to the kitchen. He is back at it again.
