Hi, my name is Tim and I just took up smoking. I'm a DIYer in a lot of areas, so last summer when I tried some pulled pork that a friend of mine had smoked himself I realized I needed to get into this hobby. My setup is a Weber 22" kettle grill, Slow n Sear, Thermoworks Smoke temp probes, and a smoking shed that I just built (see pictures). So far I've done one chicken, two turkeys (one for Thanksgiving), and two pork shoulders. The results have been EXTREMELY rewarding, I can't wait to try more.
The shed isn't a smoking shed in the usual sense, but I think I could convert it with a little modification. I just built it to minimize the variability of rain, snow, wind, etc. It was 20°F outside when I fired up the grill on Thanksgiving morning, but by hanging a heavy vinyl sheet over the opening I've been able to keep the temp inside about 20° warmer than outside. I might build an actual door at some point.
Anyway, I've learned a ton from this website already - from recipes to equipment recommendations - and I can't wait to learn more and share what I've learned. So far the biggest tips I've learned from experience are: 1) save the juices! both for reheating leftovers and adding flavors to other dishes; and 2) don't smoke during church - if the temp drops too much you won't be around to do anything about it!
