Been with the BBQ/Smoking/Grilling "hobby" (SWMBO's words, not mine) for many years and have evolved to a new path from previous smokers. Use to have a wood burner, propane and even a pellet smoker at one time or another. Settled on charcoal with a Weber Kettle then added a 22" WSM which I heavily modified for usability. After awhile, got the mini-WSM bug and built a mini that's about 1/3rd the size of the standard WSM. My adult son "persuaded" me to gift him the 22" WSM as he was ready to move over to the darkside.
Stumbled across a good deal a few weeks ago, involving a copper colored Weber Performer that had been a display model at the local big box hardware and "everything else you don't know you need yet" store. Some lowlife had ripped off the igniter button (that houses the battery) and the "timer" face plate. Replaced the igniter button and didn't bother with the timer because I've got better timers. Really big score since it was a display model, it was already assembled. We know what a hassle that it can be sometimes with having to assemble things.
Modifications: as you will soon discover, I'm the type that is always looking for ways to improve something. The diesel truck group I hang out with call it "BOMBing" (BetterOffModified, Baby). The Performer has been modified to accept the DigiQ that I use with the Mini-WSM. Been busy adding the Slow 'N Sear Plus, Drip N Griddle, Easy Spin Griddle Grate and the Grill Grates that cover the SnS. Decided to add the Grill Grate that covers the center portion of the kettle and it should be here next week.
Can I say it's good to be retired? Well, not completely, I have a part-time job that requires my presence one day a week.
I know I'm preaching to the choir, but I gotta say, the SnS with the DnG installed in the Performer, along with the DigiQ sure makes a great setup for indirect smoking. Have been doing some test runs (to see what the Performer can do) and I've been impressed by how it locks in at the programmed temperature.
Needless to say, because of the suggestions over on Adrenaline website, I found this site and here I am. Since the kids have grown up and have their own lives now, there's just the two of us, so big smokes are not in the picture. However, still have a couple of projects in mind (and the meat resources to make it happen). Got some pork belly (thanks to Costco) that's going to become burnt ends and a rack of Frenched Pork Loin Rack (Tomahawk -10 ribs) (thanks to a local Restaurant Supply house, that allows those outside the trade to shop at, Cash 'n Carry) in the food lineup. The rack will probably loose a couple of sections so I can try out a tomahawked pork chop scheme. The rest of the rack will probably be left whole for another smoke involving pork loin.
