    Hello from Canyon Lake, TX!!

    Not a newbie but still trying to learn everyday!! I seem to be a Weber fan because I currently own a Jumbo Joe, 22 inch kettle with slownsear and just got a 22 inch WSM a couple of months ago. I have referenced this site for a couple years now and finally decided to join to try to gain more knowledge about the hobby I love. Also love to fish, hunt, golf and absolutely love to cook in my dutch ovens which inspired my purchase of the WSM so I could put a pot of whatever on the second rack and catch the drippings from above. Just tried Memphis Dust on some chicky breasts last night and thought it was great! Also removed the skin from two of them as a trial from somewhere I read on here and cooked them separately and the skins were delicious!! Also the breasts with out the skin cooked up just as good as the ones with the skin. I was scared they might dry out but they didn't. Definitely something that I will continue to do in the future.

        Since you’re new, and if you haven't already done so, please check out our homework assignment post for new members, it contains a few how-tos and please-dos. This will help you learn your way around so you can get the best experience from our forum.
