Glad I found this place! I wasted 43 years of my life not liking ribs. When I was a kid the only ribs I ever tasted were from an oven, so I decided I didn't like them. After buying my weber kettle I came across the "Slow N Sear" and was amazed at the steaks I could cook with the reverse sear and cold grate sear. A friend of mine after trying my steaks convinced me to cook him ribs, (not hard to convince me to drink beer for 6 hours while bbq ing) and that led me to this site because I had no idea how to do it. So thank you all for the huge amount of info I was able to gather to make pretty good ribs on my first try. Since then, I've had time to read a lot more and have gotten a lot better at it, and now I love ribs!
As a side note, my first kettle was the master touch. after 3 months, I sold it to my neighbour after he tried my steaks on it and I replaced it with a performer. Then after he tried my steaks on the "Slow N sear" he bought one of those as well. I can still outcook him any day though.... just saying...
