    Hi - first discovered Amazingribs.com this summer, and enjoyed some free advice. Figured it was time to pay my dues and get access to the forums. Grilling and smoking are one of my passions (just ask my wife). I built a pavilion out by the pool this past spring mostly so I could have a dry/shady place with power and fans while I hang out cooking on the grills and smokers. Plus it makes a nice place for the family to enjoy the meal once I'm done!

    Most of my cooking these days is on a Weber Performer Deluxe (22.5") with Grillgrates, with backup being an old 2002 model Weber Genesis Silver A also outfitted with Grillgrates. When I have a big job I break out a second Weber 22" kettle, and an offset smoker one of my dad's welders made for him back in the 1980's, from all 304SS, so it will outlast me. Last big smoke was 9 Boston butts for my daughter's engagement party last month, and that took both Weber kettles and the bigger smoker.

    Right now my main delimma is how to prepare my turkeys for Thanksgiving! I've typically smoked two 20lb birds with olive oil and a dry spice rub inside and out, but am thinking of spatchcocking the birds this year. Oh, decisions, decisions....

      HouseHomey. Ironically, before he moved many years ago, and gave me the smoker he had one of his shop guys weld up, my dad thought he would "spruce it up" before giving to me, by painting it with high temp black paint. I was not very happy as I would rather look at stainless than black. Over time it has been wearing off, and exposing the underlying stainless. The firebox he did not paint - just the main body. Go figure. Here are some pictures of everything going on the day before my daughter's party.... Pavilion is not visible as the grills are past the end....

      Welcome, jfmorris! If I lived in Huntsville, my main dilemma would be how to cut back from going over to Decatur and Big Bob Gibson's too much.

        Haha, yes, that white BBQ sauce is a north Alabama thing, invented by Big Bob Gibson for sure. You either love the white sauce or hate it, and I've got family members that go both ways, sort of like Auburn versus Alabama in fact. I like it with my grilled chicken though - I'll buy whole birds at Sam's, split them, grill them, and serve with white sauce.

        I'm more on the hate side when it comes to the white sauce, but I love that place nonetheless. I was on a mission to get there for dinner on the way back from PCB this summer.

              Welcome to the Pit! White sauce takes a little getting used to appearance wise just like South Carolina mustard does. But, that white sauce goes great on pork as well as chicken.

                  Thanks FireMan. I'm definitely gonna do it. Only question is whether I use the big smoker or the two Weber kettles. If I follow the recipes on here, I'll want a drip pan with gravy fixings under each bird too.

                Welcome! I've spent a fair amount of time in Huntsville (Redstone Arsenal) on business travel "back in the day". Sat through an almost tornado in Bubba's Sushi Bar one evening. Sirens blaring, rain coming down in buckets, and no one even moved away from the big glass windows in the front. Dang near dirtied my pants...
