    Greetings from Charleston SC

    Wanting to say hello and introduce myself. I’m Joe. I live just outside Charleston with my wife and dogs and have always loved making bbq but have recently gotten a bit obsessed with it. I hope to learn as much as possible from being a member here. Happy smokin!

        I currently have an Oklahoma Joe highland with a baffle/tuning plate, gasket seals and latches. Have made some good ribs on it but I could do better I feel. The baffle plate helps but I still have a good bit of heat difference from one side to the other.

          I'm sure there's some quality food coming off that cooker -- its the cook, not the cooker, that makes the difference! Once you learn your temperature profile, you'll be placing the meat in the right spot at the right time. Do you have a thermometer you can use to monitor the temperatures where the ribs are?

          Yes sir, I have two digital meat thermometers and one digital ambient probe. I’ve gotten rather ocd over those as well. I’ll probably end up with a whole cabinet full of them before it’s all over with.

          Welcome SmokinJoe from Scotia, NY. Whereabouts in the Charleston area do you live?I lived down there for about 8 years. James Island, West Ashley, and Johns Island. My father and brother still live down there.
