    Belated hello from Seattle

    Hello all. I've made a few posts here and thought I should do an introduction. I'm a newbie with a few nice cooks under my belt. I grew up eating well off my godfather's kamado and a Kamado Joe Classic was his family's wedding gift to us last August. Before that I relied on a crumbling Char-Broil gasser for several years that now sits neglected behind the house.

    I'm not a natural talent when it comes to cooking but I follow directions really well. Where my wife can throw together a great meal from whatever is in the fridge, I'm only comfortable following recipes to the letter and that works out well for me. Meathead's in-depth recipes and discussions really help me along so I've been studying this site for a while now and thought I should show some support and get access to the knowledge in this community.

    Summer is when I shine. With night arriving early here in the winter I don't do as much cooking as I'd like but I'm hoping to be better about that so I can get my technique more consistent.

                  I get nearly all of my meat from the Live Butcher in White Center. Really nice staff there. He doesn't carry prime brisket but all his beef is Painted Hills. His sausages are excellent. I usually get chicken from PCC.

                  They do have the KJ big lump at Costco SoDo if you want to check it out. I bought a 30lb bag for $22 and will consider picking up another while they're here for the week.

                    Being from Portland I decided I needed an outdoor kitchen so I could still cook in the rain. Maybe you should add one to your property?

                      I'll talk to my wife about making that a priority We just bought the house last year so we're up to our ears in projects but I would like to figure out some covering that isn't an eyesore. I managed to get a decent grill table off Craigslist for cheap and eventually want to build a stone version.

                    Congrats on the new house. I'm in the process of building the kitchen here in PDX. Last year I built a smaller more simple one in California. If you can swing it you should. Maybe next year?

                      Your outdoor kitchen is roughly the size of my house It looks really nice and I'm sure it's a fun project. My grill is just steps out the door of my kitchen so it's not too bad to get back and forth. I plan to put a basic cold water sink outside so I don't have to open the door with my pinky when my hands are a mess. Other than that, a cover and some lighting.
