    Hello from Sydney, Australia

    Hi all,

    I discovered this amazing site through a friend of mine and I use it so much I thought why not pay up as a member. I have always loved smoked meats and ribs but they are so damn expensive here so I thought I want to try my own. I started smoking using my gas grill and a smoker box. I have recently built myself an Ugly Drum Smoker and I love it! I am looking to master the art of smoking meat using my UDS and eventually I'd like to build a proper pit in the backyard and also upgrade to an offset stick burner.

    So far I have cooked last meal ribs, pulled pork and even cured my own bacon a few times. The pulled pork and bacon were SO GOOD! Still experimenting with ribs as they are quite expensive here. Once I have a bit more confidence I am looking forward to trying a full packer brisket as well, again, expensive and hard to find here!

    Aaron Franklin is my BBQ hero and I can't wait for the day I line up from 5am to visit Franklin Barbecue in Austin! Meathead is a close second!

      Sorry traditional BBQ meats are so pricey, there down under...
      That's gotta be frustratin'...

        Hey HouseHomey, wow, Huntington Beach looks like a nice spot! I know that our beef and pork is very high grade so that could be a reason, other than that I'm not sure why it's so expensive! EG pork ribs average around $20 per kg, pork belly around $15 per kg, I can get my pork butt for $6 per kg which is why I've cooked pulled pork so many times!
        We've recently had a Costco open up not far from us so I will have to visit to compare prices.

          Wow! I feel for you $9.00 lbs for ribs, yikes I use 9lbs as an average cost per rack. Yikes!

          Thanks Mr. Bones traditional American BBQ is not so traditional down under so it's sometimes hard to find what I want, but I love it! It's my hobby and looking forward to learning a lot from all of you!

            No worries about 'splainin'; I spent a lot of my life overseas, an' get that there is a whole, entire, great big Earth out there, with little/no regard to whatever goes on th' U S of A LOL!!!
            I'm interested to see what/how ya' do yers, glad to share same, from here...
