Greetings men and women of smoke and steel

Hello there... new to the Pit, been reading the website for a few weeks now.

I've cooked on gas grills and cheap charcoal grills for a while, but over the last couple years I've been wanting to get more serious than hot dogs, hamburgers and kebabs. So I hunkered down to research what the best unit for me was - considering that I wanted to smoke slabs, fire pizzas and still cook occasional brats, dogs and burgers (but not pay $1000+ for an egg) ... the wisdom on the site pointed me to a good ol' Weber kettle and the Slow and Sear accessory.

Now I'm looking forward to reading everyone's techniques and recipes.

Huntington Beach welcomes you Sir. Nice call for the budget, but I'm bias and well.... a bit cheap too. You will be smoking and searing away in no time at all. Remember...pictures please.

You can get an egg for ~800. Yeah there will be a few extras, but that's incremental. Or you can try to see if there's an Eggfest nearby which will allow you to buy one at a cut rate with a few hours use on it. It sounds like a ceramic kamado of one kind or another matches your needs.

Welcome aboard! With an intro like that I almost feel we all should be running around flinging our capes & shouting live fire! Get ready for the ride, eat good & have fun!
